best avocado toast

I promised a little while ago that I would post it and so here it is: my best avocado toast! It’s one of my all time favourite breakfasts and I love making this at home.

Avocado on toast is always good. But this is not just avocado on toast. Oh, no. This is so much better! A few little additions make it so amazingly good.

You need:
– an avocado,
– really good bread. My favourite is sourdough, sometimes with seeds,
– lemon
– garlic, or garlic oil
– rosemary
– parsley
– salt and pepper
– eggs (free range, of course)

And, as you can imagine, it’s really straight forward – perfect for first thing in the morning. Pop some breakfast making music on; yesterday we had Brigitte Bardot. Chop the avocado, and mash with the garlic (I sometimes use garlic oil instead), lemon, herbs, salt and pepper. A dash of lime is extra nice, too. Poach your egg – or, ideally, find someone else who is consistently good at it, which is what I do! Thanks, John – toast the bread, and then put them all together… easy! If you have been marinating some feta in garlic and rosemary oil in the fridge for a day or so, you can add this too and it is SO good… but that is one special treat for breakfast! Enjoy!

Yum! I could eat this right now, I love avocado and feta on toast- havent ever tried poaching an egg, but may have to try now :)

Yum! I love avocado. In fact, I have had way more guacamole over the last two days than anyone deserves! This looks great and I have two more avocados on the counter, so I will try this out.

This is pretty much exactly what I had for breakfast today, but I used German Rye bread. Such a filling and satisfying breakfast...yummy!!!

Oh, there should be a ban on posts like this. Avocados are so rarely ripe enough over here that making his dish is far more difficult than you might expect. I shall make it a mission though!

There really is nothing yummier than avocado on toast and with poached eggs! I'm so horrible at poaching eggs though so I tend to only have this combo if I go out somewere.
